I preordered Tanya Bakes weeks ago, and since it finally arrived I have been a crazy baking machine. I tend to overbake pretty much all the time; it’s impossible for a box of butter to last more than a week in my fridge – I have to bulk buy! Whenever I get a new baking book I go even more wild than usual. So far, I absolutely love Tanya’s book. Every single recipe looks like something I would genuinely want to make – sometimes half of a recipe book just doesn’t appeal to me, but everything in this one looks fabulous. I’ve made the apple and blackberry crumble and the banana bread both twice already, they’re going to be absolute staples in my repertoire from now on.
I bake banana bread on a really regular basis since bananas get overripe so quickly and it’s such a good way to use them up, so I’ve tried a lot of recipes. My previous go-to was the recipe from Annie Bell’s Baking Bible, which is an incredibly dense, moist texture. But after the first time making Tanya’s banana bread, my old favorite was officially kicked to the curb. This bread is AMAZING. It’s so cakelike and delicious, I could eat it every single day and never get tired of it. My only tip for this recipe is to double the amount of vanilla – I do this with most recipes that call for vanilla, and it really enhances the flavor. If you haven’t already gotten your hands on Tanya Bakes, it’s a serious must.
